Polishing consumes a lot of actual time, and does very little for your end result. For me, any coarse removal= coarse stone. WebbIf the sharpie is removed from the shoulder at the tip, from the whole bevel in the center, and the edge at the heel, you have the knife clamped wrong. You want the sharpie to be removed from the whole edge bevel evenly. Check both sides and use the angle that removes the most sharpie at once.
